If you are capturing games from the 360, there is no HDCP so you could get one of these:

http://www.blackmagic-design.com/products/intensity/

The PS3 has HDCP for both games and movies so you would have to get a hdcp stripper.

Uhhh...they're on your computer. They record your desktop/screen. They cannot be used without a computer.
